Cassava's Thanksgiving Cooking Feast Instructions

Helpful Tips:

 

Our turkey container is not oven safe. Please remove from the container and transfer to an oven-safe dish or a properly fitting roasting pan

 

As with our side dishes, the containers are made of aluminum and the tops made of plastic, if using an oven, please remove the tops and replace with aluminum foil

 

If using a microwave oven, please remove contents out of container and place them on a microwave-safe dish. 

Natural Petit Turkey (7-9 lbs) - in large beige pans

 

Oven Method:

  • preheat oven to 325 F, transfer turkey to an oven-safe dish or roasting pan, and cover the turkey with aluminum foil.

  • It is suggested that when reheating, it takes about 5 minutes for each pound of turkey. 

 

 A reminder that still ovens, with no air fan for circulation, can take 20-30 min longer than a standard convection oven

  • 10 minutes before removing from the oven, remove the foil covering the turkey and raise the temperature to 350 F to begin crisping the skin 

  • Remove from the oven, allow to rest for an additional 10-15 minutes to allow the juices and meat to rest prior to slicing

Microwave Method:

  • Divide the turkey into 6 parts, the breasts (2 pcs), legs (2 pcs), and thighs (2pcs)

  • Transfer separately to microwave-safe dishware

  • Cover each dish with plastic wrap. Baste with a little bit of butter, allowing steam to ensure faster heating and to keep them as juicy as possible

  • Reheat each turkey separately on a high setting

    • Turkey breasts- 5-8 minutes

    • Turkey legs- 5-8 minutes

    • Turkey thighs- 8-12 minutes

Sourdough - Cornbread Stuffing with Sage

  • Oven: preheat to 325F, heat for about 10-15 min, check periodically for the top to begin crisping, once bubbles are visible around the edges and on top heating is complete

 

  • Microwave: Transfer cornbread to a microwave-safe plate or bowl, reheat at 2 min on a high setting, check periodically until the stuffing has warmed thoroughly. Do not overheat as this can make the cornbread stale and tough

Herbed Gravy

  • Stovetop: Place in a medium saucepan, turn on the fire to medium heat, stirring occasionally with a wooden spoon or a heatproof spatula. This will prevent the bottom from scorching.

 

  • Microwave: DO NOT REHEAT in the aluminum pan!! Place gravy in a microwave-safe bowl. On high heat, microwave for 5 min, stir every 2 min. If more time is needed to reheat, heat for another 2 minutes

Garlic Mashed Potatoes  (crispy shallots and chives garnish)

  • Stovetop: place in a medium, heavy-bottomed saucepan if possible, turn on the fire to medium heat, stirring occasionally with a wooden spoon or a heatproof spatula. This will prevent the bottom from scorching

 

  • Microwave: DO NOT REHEAT in the aluminum pan!! Place mashed potatoes in a microwave-safe bowl. On high heat, microwave for 4 min, stir every 2 min. If more time is required to reheat, heat for another 2 minutes 

 

  • Add fried garlic and chives at the end for garnish.

Green Bean Casserole/Button Mushrooms (fried shallots garnish)

Oven:

  • Preheat to 325F, cover the casserole with aluminum foil

  • Heat for about 10-15 min, check periodically for the top to begin crisping

  • Once bubbles are visible around the edges and on top, remove the foil and raise the temperature to 375F to begin crisping the top of the casserole for about 5 minutes

 

Microwave:

DO NOT REHEAT in an aluminum pan!! Place the casserole in a microwave-safe bowl or platter and microwave for 3 min on high heat, stirring every 2 min.  If more time is required to reheat, add another 2 minutes until warm

Candied Yams

  • Oven: preheat to 325F, heat for about 10-15 min, check periodically for the top to begin crisping and marshmallows start to caramelize from the top.

  • Once bubbles are visible around the edges and on top remove the foil and raise the temperature to 375F to begin crisping and caramelising the top of the yams for about 5 minutes

 

  • Microwave: DO NOT REHEAT in aluminum pan!! Place yams in a microwave safe bowl or platter

  • On high heat, microwave for about 4 min, stir every 2 min. If more time is required to reheat, heat for an additional 2 minutes

Sweet Potato Cornbread and Honey Butter

Leave the honey butter at  room temperature for about an hour to allow the butter to soften and become spreadable

  • Oven: preheat to 325F, heat for about 10-15 min, check periodically for the top to begin crisping, once bubbles are visible around the edges and on top, heating is complete

 

  • Microwave: Transfer cornbread to a microwave-safe plate or bowl, reheat at 2 min on a high setting, check periodically until cornbread has warmed thoroughly. Do not overheat as this can make the cornbread stale

Cranberry-Citrus Sauce

  • Store in the fridge until ready to use


 

Pumpkin Pie

  • Store pie in the fridge until ready to be served. We recommend taking the pie out of the fridge about 10 min prior to serving and adding whipped cream after the pie has been individually portioned

  • garnish with whipped cream and cara cara orange marmalade
